Tempeh Tacos

A tempeh favorite, this recipe can be simple or elaborate, depending on your taste buds!

You will need:

1 8-oz package of tempeh

Bragg’s Liquid Aminos (or any soy sauce)

garlic

taco shells or tortillas

any toppings your heart desires

Cut the tempeh into cubes and simmer in a pot of water and Liquid Aminos.  Simmer for about 10 – 15 minutes.  When done, drain the liquid and put into a bowl.  Add a little more Liquid Aminos, as much garlic as you’d like, and any seasoning.  (We first made this last night and did not use taco seasoning, but we are going to try it next time.  It tasted great anyway.)  Mash it all together.  I use a potato masher, but just a spoon would work too.  Add it to a pan and fry it up a bit, adding whatever seasoning youd like.  It will not get dark brown like ground beef, so just use your judgement on when you think its ready.

Build your tacos as you see fit!  When we first made these, we also made a little guacamolie to put on it and some salsa.  Along with a few other toppings, it was delicious.  We got 4 tortilla tacos out of the tempeh that was made.

Tempeh Stuffed Peppers

Here is a delicious tempeh recipe that is delicious and nutritious!

You will need:

4 bell peppers (red works best)

1 8-oz package of tempeh

rice

1 can coconut milk

garlic

Bragg’s Liquid Aminos (or any soy sauce)

basil

Cut the tempeh into cubes and soak in a pot of water and Liquid Aminos.  Simmer for about 10 minutes.  Meanwhile, cook the rice in coconut milk and add more rice or water as needed.  You can also add cardamom pods for extra flavor.

While those are cooking, boil the peppers in water for 5-10 minutes to soften them up.  After they have cooled off, cut the core out, leaving them hollow.

When the tempeh is done simmering, drain the liquid and put the tempeh into a bowl.  Add garlic and basil if you’d like, but trust me, it tastes awesome.  Also add more Liquid Aminos  to taste.  Add whatever seasoning you would like and mash it all together.  I use a potato masher, but the tempeh is so soft just a spoon would do.

Spoon the rice into the peppers and fill about halfway, then fill the rest of the space with the tempeh mixture.  Put in an oven heated to 250 degrees for about 15 minutes.

You may have left over rice and/or tempeh, but you dont need the pepper to enjoy!

Delicious and so easy to make!

Savory Fish Casserole

You will need:

2 onions, sliced

2 lbs boiled potatoes, sliced

1 tsp butter

olive oil

garlic powder

fresh parsley

ground pepper

1 cup water

fish fillets ( tilapia is a good one)

garlic, minced or chopped

peas

Spread the onion and potato slices along the bottom of a casserole dish.  Sprinkle with butter, oil, garlic powder, parsley, and ground pepper.

Add water, bring mixture to boil and cover.  Simmer for 15 minutes.  Spread the fish fillets on top of the vegetables.  Season to taste.  Cover and simmer about 10 minutes.  Add the peas and simmer 5 more minutes.

While it is simmering, saute the garlic in some oil.  Or you can add it on fresh, whichever you prefer.  Spoon on top of the fish and it is ready to go!  I would do a fish fillet for every person that is going to be eating, maybe an extra or two.

Spicy Raw Spinach Dip

You will need:

spinach

Tahini

1/3 can coconut milk

1 red onion

1 avocado

juice of 1 lemon

juice of 1 lime

garlic

Blend together all ingredients.  The red onion and garlic are the food factors that will make it spicy, so the more you put in, the spicier it will be.  Add the tahini and coconut milk in small amounts, to adjust to the consistency.  Add less if you would like it more solid than liquid. Add salt and pepper to taste.

This recipe was an experiment after looking at ingredients in the store and realizing all of them contained either mayonnaise or sour cream.  We finally found one that had tahini in it instead.  So we ran with it and what came out was absolutely delicious.  It worked absolutely amazing in a bread bowl that we baked in the oven for just 15 minutes.  Yum!

Tahini Quinoa

We often refer to it as “goop”, but it is very tasty.  It was a hit at a pot luck I hosted at our house as well.

You will need:

Quinoa

Tahini

Bragg’s Liquid Aminos

Avocados

Tomatos

Make up the quinoa for however many people will be eating.  Mix in the tahini and Liquid Aminos so it is a good consistency.  I recommend going easy on the Braggs – add a little at a time, it is very potent.  But it balances out the thickness of the tahini.  Have a bowl of chunks of tomatos in one bowl and chunks of avocado in the other.  Build your own bowl and enjoy!  It is very easy to make, very filling, and very delicious!

Tasty Balls

So I can tell you a quick, easy recipe for some tasty goodness in ball form that people will just love!

Just mix together some almond butter, tahini, and raw agave nectar. Then add some dry ingredients. I have added raw cacao, goji berries, and oats all blended into a powder. This last time I made them I also added ground up dates, maca powder, and gotu kola powder.
When you get the right balance of dry and wet ingredients, just roll into ball form and refrigerate!

It is so simple to make and I find that people just love to sample my Tasty Balls.
It also makes for some interesting conversation!

Coconut Curry Squash Soup

Coconut Curry Squash Soup

You will need:

1 medium sized squash

1 red onion

4 carrots

3 celery stalks

1 can Coconut Milk

garlic

basil

curry powder

cumin

sea salt

ground black pepper

First, cut the squash in half and remove the seeds. Season to your desire, and roast in the oven at 350 degrees for about 30-40 minutes, inside facing down in a pan.

While the squash is cooking, cut up the carrots and celery and onion. If you want a creamy soup, all will go in the blender. You may save some pieces to go directly in the soup if you so wish. Put the veggies in the blender, along with the coconut milk, garlic. When the squash is done, scoop out the insides and add to the blender. Use curry powder, cumin, salt and pepper to taste and blend it all together. I like to add the basil at the end instead of blending it up as well. When it is all blended together, you may heat it up or eat it cold! Enjoy!

Guacapestolie

Guacapestolie

You will need:

2 avocados

red onion

pine nuts

garlic

basil

1 lemon

1 lime

sea salt

black pepper

Scoop out the insides of the avocados and put into a blender. Add as much garlic, basil, and pine nuts and red onion as you desire. Add the juice of 1 lemon and 1 lime and blend all together. Add salt and pepper to taste.  Its great for parties or pot lucks!
