What is Tempeh?

What is Tempeh?

Originating in Indonesia, tempeh is a fermented food consisting of cooked soybeans (or other legumes, seeds, etc) bound together by a dense mycelium of a mold called Rhizopus.  It is sold fresh, refridgerated, or frozen in three quarter inch cakes or patties.  You can also buy Rhizopus, which is also called “tempeh starter” and make your own tempeh.  It is used in recipes ranging from main dishes to salads to dips.  It is a highly versatile food that will add flavor and nutrition to any recipe.

What are the Health Benefits of Tempeh?

Tempeh provides essential protein in a strict vegetarian diet.  It is also the world’s richest resource of Vitamin B12 for the vegetarian diet, which is often lacking in a vegetarian diet.  In one 3 1/2 oz serving there is only 157 calories.  It is also low in saturated fats and contains no cholesterol, and is extremely low in sodium, making tempeh an ideal food for a healthy diet.

Tempeh is also easy on the digestive system.  During the fermentation process, enzymes from the mold partially break down the soy proteins and oils, so the body doesn’t have to work as much to break it down.  It also contains a good amount of natural dietary fiber, which also aids in the digestive tract and is beneficial in protecting against chronic diseases.

Tempeh also contains natural antibiotics, produced by the Rhizopus mold.  These antibiotics help fight off many diseases.

Tempeh is most commonly found made with soybeans, so you also get all the healthy benefits of soy.  If you make your own, you can experiment by trying different nuts and legumes to get their nutritional value.

How to Cook with Tempeh

As mentioned earlier, tempeh can be used in a variety of different ways.  It can be sliced up thin and fried with garlic and soy sauce for a salty substitute for bacon on pizza or in breakfast meals.  It can be ground up into a dip such as guacamole for added taste and nutrition.  It goes great on a salad.  Just cut it up into tiny pieces and fry it up lightly, maybe adding a few spices, and toss into a salad.

Another way to cook with tempeh is cut it up into cubes and simmer it on the stove in a pot of water and soy sauce (I prefer Bragg’s Liquid Aminos).  Simmer for about 10-15 minutes, then drain the liquid.  You can use the tempeh fresh like that, or mash it up and use in other ways.  My favorite recipes involve this process.

Kale is becoming more and more popular in our everyday culture.  It is because the rumor keeps on spreading.  What rumor?  The rumor that kale is thee most potent and health-promoting vegetable known to man.  True, kale is a strong vegetable with numerous health benefits, more nutrient-rich than its cousins broccoli or spinach.  Though if you ask me, all three go great together!

Kale is a member of the Brassica family along with collard greens and brussel sprouts.  It grows as curly blue-green or violent-green leaves on thin stalks.  This strong vegetable is most flavorful in the winter months.  Its best season is mid-winter to early spring, although it can be found year-round.  It has a mild, earthy flavor that works great in a mixed green salad or in soups.  It can also be steamed, sauted, or boiled, but the more you cook it, the more the drop in healthful benefits.  Raw is always the way to go to get the most nutritional and healthy benefits of vegetables.

Kale gives the immune system a burst of power because it is so high in Vitamins A, C, and E, which are vital to the immune system functioning properly and efficiently.  Kale is also rich in Vitamin K, iron, lutein, and calcium.  Many people think that dairy is the best and/or only source for calcium.  Actually, vegetables such as kale, spinach, and broccoli are an excellent source of calcium, even better than milk!  Kale is also an excellent source of fiber, which is something everybody needs in their diet.

Kale has also been known to be part of a cancer-fighting diet.  That is because kale has an abundant source of sulfur-containing phytonutrients.  These phytonutrients trigger healthy enzymes in the body that help cleanse the system and get rid of harmful compounds.  While these enzymes help the body detoxify, the phytonutrients also boost the  body’s ability to fight off cancer cells.

So pick up some kale next time you are at the grocery store.  Replace your iceberg lettuce salad for a kale salad and you will be happy you did.  Use kale on sandwiches, in soups, or as a side dish saute some kale in a little bit of olive oil and garlic and add salt and pepper.  See what the rumor is all about!

Raw Garlic for Your Health

How does raw garlic work for your health?

When garlic is chopped or crushed, this action produces two sulfides, allicin sulfides and diallyl sulfides.  These sulfides are what produce all the health benefits of raw garlic.  Roasted garlic has no medicinal value because it is whole and it has been cooked to a high temperature.  Diallyl sulfides will survive cooking, but its medicinal value is not as high as the allicin sulfides.  Cooking chopped garlic will degrade the allicin, and microwaving it will destroy it all together.  To get the best garlic health, chop the garlic or press it into some olive oil and leave it for about 15 minutes.  Add it to the meal at the very end of cooking, or even to the plate once its been served.  The smaller the pieces of garlic, the more sulfides produced and the more medicinal value it will have.  Also, organic garlic bulbs will have a stronger taste, which means more sulphur content resulting in more medicinal value.

What does garlic cure or treat?

The allicin sulfide that is produced acts as an antibiotic more powerful than penicillin and tetracycline in destroying bacteria.  It can kill strains of bacteria that have become immune to other antibiotics.  Because garlic does not remain in your system constantly, bacteria cannot become immune to it.

Garlic fights infection and stimulates the immune system.  It can kill microbes and bacteria that cause the common cold, whooping cough, tuberculosis, botulism, vaginal and bladder infections, gangrene, diarrhea, staph infections, dysentery, and typhoid.  It has been known to treat a staph infection very effectively by rubbing crushed garlic into the infected area.  It will undoubtably burn, but that is a small price to pay for the result.

Studies have shown that raw garlic boosts the power of your immune system’s own cancer-fighting cells by 140-160%.  The sulfides contain cancer-preventative chemicals.  It acts as an anticoagulant, reducing the tendency of blood to form dangerous clots and enhancing the body’s ability to dissolve clots.  Garlic also contains a high level of selenium, which has anti-tumor properties. It may help remove heavy metals from the body as well.

Diallyl sulfides help the immune system and cholesterol.  It reduces blood presure, cholesterol, and unhealthy triglycerides.  Garlic also acts as a strong antioxidant – it reverses the precancerous damage done to cells by oxygen-free radicals.  It can prevent or relieve chronic bronchitis as well.

Home Garlic Remedies

Garlic acts as a decongestant and an expectorant, clearing excess mucus that may be clogging your system.  If you have a cold and are very congested, try this remedy:  Boil a large piece of onion in water, then let simmer for 10 minutes.  Add some cayenne pepper, and fresh ginger root if youd like.  Then add chopped or pressed garlic to the water.  Strain and drink the broth.  For a quick fix, try just chopping up some raw garlic really fine and inhaling its fumes.  That should clear your airway pretty quickly.

If you suffer from athlete’s foot, a good garlic antibiotic will help you.  Chop up some raw garlic and let it sit for a few minutes.  Then add it to some water for a food bath.  Soak your feet for about 15 minutes.  You can save the water you use to reuse again later.

For an earache, crush a clove of garlic and let it sit in some warm olive oil for about 15 minutes.  Strain the liquid.  Soak a cotton ball in the liquid and put it over the ear.  The garlic can fight off the infection. The same works for a toothache.  Just chew on some raw garlic in the infected area.  It will burn at first, but will improve your condition overall.

Have you ever heard the myth that garlic eaters repel mosquitos?  Well that is false.  Just because a person eats a lot of garlic does not make them less susceptible to mosquito bites.  A more useful way to use raw garlic as a mosquito repellent is to actually rub fresh garlic on your skin.  You can rub it right on a mosquito bite to prevent infection.  Or, if you dont mind smelling like garlic, rub fresh garlic on exposed skin when you are outside.  If any mosquitos are brave enough to land on you, they wont be there for long!

Garlic is wonderful for first aide uses too!  To activate the garlic antibiotic, just crush and wait fifteen minutes.  You can rub it on some meat that could contain bacteria.  It will kill off the bacteria, making the meat safe to eat.  If you are out camping and have no source of clean water, add crushed garlic to unclean water and leave it overnight.  The water will taste a bit like garlic, but it will have killed off any dangerous bacteria.  When bitten by a snake, you can rub garlic into the bite.  The venom spreads through teh lymphatic system – so do the garlic sulfides.  It is important to note that garlic is not an anti-venom, but it can help fight off the venom while you get to a hospital.

Garlic Breath Remedies

There are many garlic lovers out there, I myself am one of them.  But garlic breath isnt for everybody.  If you are interested in trying out all the medicinial uses for garlic, but are afraid of offensive breath, there are some remedies you can try.  There are odorless garlic supplements you can buy in your local natural foods store.  If you do want to eat garlic though, eating a slice of lemon afterwards or drink some lemon juice to help with the garlic breath.  If you are cooking with garlic, add some parsley to counteract the odor effects.  Or chew on some parsley while eating.  The simplest solution is sometimes the easiest – after eating a garlicy meal, just brush your teeth!

Apple Cider Vinegar – Stomach Remedy

Apple Cider Vinegar is made through the fermentation process of apple cider.  The juice of apples are squeezed out.  Bacteria and yeast are used to break down the sugars into alcohol, turning it into vinegar.  You can recognize ACV by its orangish color and cloudy nature.  It is considered a “living food” because of the healthy bacteria that remains after the fermentation process.  It is one of the richest sources of potassium, which helps rid the body of excess sodium that causes water retention in the body.  It contains many important vitamins, minerals, enzymes, and essential amino acids including vitamins A, E, C, B1, B2, B6, P, and Beta Carotene and minerals copper, iron, silicon, fluorine, potassium, calcium, magnesium, phosphorous, chlorine, sodium, and sulfur.

The Apple Cider Vinegar Remedy.

The health benefits of ACV are numerous.  It can provide aide with weight loss, digestion, high blood pressure,dandruff, split ends, metabolism, arthritis, and rheumatism, as well as some different stomach-related illnesses.

Using Apple Cider Vinegar daily will aide in weight loss.  It will be a progressive loss, which means it will stay off.  People who crash diet often gain all the weight back very quickly.  ACV stimulates metabolism and the potassium content ensures proper chemical balance, so more fat is burned.  In fact, because it is stored in the body in the form of glycogen, which has a time-release effect, it washes fat out of your body over an extended period of time.  It also acts as a natural appetite suppressant.  Try taking one tablespoon of ACV and two tablespoons of raw honey in unsweetened grapefruit juice 30 minutes before every meal – it will curb your appetite and regulate the thryroid.  If grapefruit juice is not readily available, just drinking water with one tablespoon of ACV and one tablespoon of raw honey once or twice a day will provide you with energy for the day and aide in burning fat.

Apple cider vinegar is very helpful in a variety of stomach-related illnesses.  The reason being that it destroys bacteria, fungi, and viruses that make us sick.  A daily drink of ACV may help prevent mild cases of food poisoning.  In the case of food poisoning, one teaspoon of ACV with some water will help ease the symptoms if taken throughout the day.  If you are experiencing nausea or vomiting, try taking a mixture of apple cider vinegar and water, about one tablespoon of the cider vinegar should do the trick.  Drink a glass of this mixture throughout the day until you are able to take light food down.  Drink it at least five times a day for three days to really cleanse the body of whatever toxin made you ill.  Apple cider vinegar can also be taken as a preventative action.  Drink a mixture of water and apple cider vinegar about thirty minutes before eating a meal that may cause indigestion.  To avoid heartburn, mix one teaspoon of ACV with water and sip it slowly while you eat your meal. Apple cider vinegar contains maltic acid, a natural component of apples, which helps create stimulation to your body’s digestive processes.  Drink of glass of one tablespoon ACV (add honey if you wish) with water and drink before any meal.  It will aide in the digestion of the meal.

Apple cider vinegar also aides in problems related to aging.  Two tablespoons of ACV mixed with two tablespoons of raw honey with warm water will help flush acid crystals in the body that occur as a result of potassium deficiency.  These acid crystals could result in conditions such as bursitis, arthritis, and rheumatism.  Drinking this tonic will help treat and prevent these conditions.  It is also loaded with pectin, a potent soluble fiber that sweeps through your bloodstream, cleaning out bad cholesterol that clogs arteries.

Apple cider vinegar is also a very good home remedy for your hair!  Rinsing your hair in apple cider vinegar will help prevent and treat hair conditions like dandruff and split ends.  If you have dandruff, trying rinsing your hair in apple cider vinegar and leaving it for a half hour.  Do this three times a week until the dandruff disappears.  For an aromatic hair tonic, mix a small amount of apple cider vinegar with some aloe vera juice and purified water.  Add a couple drops of rosemary and lavendar essential oils.  Also try adding just one drop of peppermint essential oil.  You can spray this mix in your hair daily to keep your hair and scalp healthy without smelling like vinegar!

Apple cider vinegar is a very healthy household item to have around, and many people swear by it.  You can buy it in pill form as a supplement either on the internet or in a local natural foods store.  It also comes in liquid form.  The best way to use its healing properties is to buy the liquid form that is completely organic and unpasturized.  This is the form where it is the least acidic and usable by the body.

Bee Pollen

Bee pollen is referred to by some as the “perfect food”.  It has many different health benefits, its easy to take, and it is completely safe, except for those who have allergies to bees and/or pollen.  If you have such allergies, it is recommended to NOT consume bee pollen.

You can also save money by getting bee pollen in bulk.  I add it to my daily smoothie, so it does get ground up into small particles.  Bee pollen is one food I make sure I always have in my refrigerator.  I highly recommend it.
